Grandma Della's Special Soup

Even though we are steadily heading toward Spring, there is still plenty of time to enjoy a hearty bowl of soup.


Let me introduce to you our family favorite...corned beef vegetable soup. As far as we know it is a family recipe, but please share with me if you have heard of it before. It comes from my Grandma Della and BellaPapa (dad) isn't sure where she got it from, but she was known to make up her own recipes.

It is a very simple recipe that you can throw together quickly.
Gather a large pot...


Then grab your can opener for the following...

Filled your crushed tomatoes can about 2 times with hot water and throw that in too. Now, we need some onions. I'd say about 2 large onions chopped to your desired size. I cheat and use these.

Now it is time for the star ingredient...

You have to use the canned corned beef. And sometimes I like to use two cans. Open it up and flake the beef into the pot with a fork.

Now, bring these ingredients to a low boil while you are dealing with these...

I hate to peel and cut up potatoes. Loathe it. So, I fill up my big bowl, gather my knife and sit on the couch. I know, weird. I used about 4-5lbs of taters but it's completely up to you. And I chop them into fairly small pieces but this is up to you too.

Throw in the potatoes, add some salt and pepper to taste and let it simmer until the potatoes are done. I like to let it go a little longer than that- you know a good southern girl lets everything simmer for at least several hours.

Now, sit down and enjoy Della's special soup. I hope this will become one of your family favorites too. Please let me know if you give it a try.

Ingredient List:
32 oz. can of crushed tomatoes
15 oz. can of baby lima beans or you can use small bag of frozen
15 oz. can of corn
1 or 2 cans of corned beef
potatoes
2 large onions or small bag of chopped frozen
salt and pepper to taste

And let me know if you have any questions. It's hard to put something that is burned into your being down on paper. In fact, I don't think this recipe has ever been written down.

Oh that sounds delicious. My family loves corned beef and they love soup, so this is going to be a winner in their eyes. I'm glad to be back, I missed everyone on my feeds list. Lots of reading to catch up on.

i am not a stew eater {all those foods touching each other--can't do it. weird, i know} but i love the dishes that you served it in!
i hate cutting potatoes also...in fact, i am kind of banned of it {me and knives are a bad combination!} i use a pastry cutting tool of sorts and it works wonders!!!

I would have to leave the corned beef out, but could substitute something vegetarian. It still sounds wonderful. I just love recipes from Grandma!

That soup sounds delicious!!! Soup just isn't ready until it's "cooked to death"!! Neither are veggies....

Thank goodness someone FINALLY wrote down your Grandma's recipe! My Grandma is gone now, and there are some recipes that will never be replicated:(

My mom makes this same soup (and now so do I). I buy those bags of frozen mixed soup veggies, add potatoes, sometimes extra corn and the can of corned beef. My mom however makes it using water and a stick of margarine! I've updated the recipe by using vegetable broth and NO margarine. Oh, and the frozen veggie mix must have okra in it, us southern girls love our okra! xo, suzy

I also make something similar but I use ground turkey. It's the ultimate comfort stewp for me and my family. Yummy!
